Browns' Hillis defends decision to miss game (AP)

BEREA, Ohio ? Browns running back Peyton Hillis said he doesn't care if others think he should have played last week despite having strep throat and flu-like symptoms. He wasn't going to jeopardize his health.

Hillis spoke in detail Thursday for the first time since missing Sunday's game against Miami. He went to the game intending to play but was sent home two hours before kickoff. Hillis defended his decision to miss the game and said he's isn't concerned if others don't agree.

Hillis said he lost "10 to 12" pounds while he was ill. He said he had no energy before the game and that played into him missing the game. Hillis sidestepped a question the Browns coaches tried to talk him into playing.

He returned to practice this week and expects to play Sunday against Tennessee.

Tobacco companies knew that cigarette smoke contained radioactive alpha particles for more than four decades and developed "deep and intimate" knowledge of these particles' cancer-causing potential, but they deliberately kept their findings from the public, according to a new study by UCLA researchers.

The analysis of dozens of previously unexamined internal tobacco industry documents, made available in 1998 as the result of a legal settlement, reveals that the industry was aware of cigarette radioactivity some five years earlier than previously thought and that tobacco companies, concerned about the potential lung cancer risk, began in-depth investigations into the possible effects of radioactivity on smokers as early as the 1960s.

"The documents show that the industry was well aware of the presence of a radioactive substance in tobacco as early as 1959," the authors write. "Furthermore, the industry was not only cognizant of the potential 'cancerous growth' in the lungs of regular smokers, but also did quantitative radiobiological calculations to estimate the long-term lung radiation absorption dose of ionizing alpha particles emitted from cigarette smoke." The study, published online Sept. 27 in Nicotine & Tobacco Research, the peer-reviewed journal of the Society for Research on Nicotine and Tobacco, adds to a growing body of research detailing the industry's knowledge of cigarette smoke radioactivity and its efforts to suppress that information.

"They knew that the cigarette smoke was radioactive way back then and that it could potentially result in cancer, and they deliberately kept that information under wraps," said the study's first author, Hrayr S. Karagueuzian, a professor of cardiology who conducts research at UCLA's Cardiovascular Research Laboratory, part of the David Geffen School of Medicine at UCLA. "Specifically, we show here that the industry used misleading statements to obfuscate the hazard of ionizing alpha particles to the lungs of smokers and, more importantly, banned any and all publication on tobacco smoke radioactivity."

The radioactive substance - which the UCLA study shows was first brought to the attention of the tobacco industry in 1959 - was identified in 1964 as the isotope polonium-210, which emits carcinogenic alpha radiation. Polonium-210 can be found in all commercially available domestic and foreign cigarette brands, Karagueuzian said, and is absorbed by tobacco leaves through naturally occurring radon gas in the atmosphere and through high-phosphate chemical fertilizers used by tobacco growers. The substance is eventually inhaled by smokers into the lungs.

The study outlines the industry's growing concerns about the cancer risk posed by polonium-210 inhalation and the research that industry scientists conducted over the decades to assess the radioactive isotope's potential effect on smokers - including one study that quantitatively measured the potential lung burden from radiation exposure in a two-pack-a-day smoker over a two-decade period.

Karagueuzian and his colleagues made independent calculations using industry and academic data and arrived at results that very closely mirrored those of that industry study, which was conducted nearly a quarter-century ago. They then compared those results to rates used by the Environmental Protection Agency to estimate lung cancer risk among individuals exposed to similar amounts of alpha particle-emitting radon gas in their homes.

"The gathered data from the documents on the relevant radiobiological parameters of the alpha particles - such as dose, distribution and retention time - permitted us to duplicate the industry's secretly estimated radiation absorbed dose by regular smokers over a 20- or 25-year period, which equaled 40 to 50 rads," he said. "These levels of rads, according to the EPA's estimate of lung cancer risk in residents exposed to radon gas, equal 120 to 138 deaths per 1,000 regular smokers over a 25-year period."

Despite the potential risk of lung cancer, tobacco companies declined to adopt a technique discovered in 1959 and then another developed in 1980 that could have helped eliminate polonium-210 from tobacco, the researchers said. The 1980 technique, known as an acid-wash, was found to be highly effective in removing the radioisotope from tobacco plants, where it forms a water-insoluble complex with the sticky, hair-like structures called trichomes that cover the leaves.

And while the industry frequently cited concerns over the cost and the possible environmental impact as rationales for not using the acid wash, UCLA researchers uncovered documents that they say indicate the real reason may have been far different.

"The industry was concerned that the acid media would ionize the nicotine, making it more difficult to be absorbed into the brains of smokers and depriving them of that instant nicotine rush that fuels their addiction," Karagueuzian said. "The industry also were well aware that the curing of the tobacco leaves for more than a one-year period also would not eliminate the polonium-210, which has a half-life of 135 days, from the tobacco leaves because it was derived from its parent, lead-210, which has a half-life of 22 years."

Karagueuzian said the insoluble alpha particles bind with resins in the cigarette smoke and get stuck and accumulate at the bronchial bifurcations of the lungs, forming "hot spots," instead of dispersing throughout the lungs. In fact, previous research on lung autopsies in smokers who died of lung cancer showed that malignant growths were primarily located at the same bronchial bifurcations where these hot spots reside.

"We used to think that only the chemicals in the cigarettes were causing lung cancer," Karagueuzian said. "But the case of the these hot spots, acknowledged by the industry and academia alike, makes a strong case for an increased probability of long-term development of malignancies caused by the alpha particles. If we're lucky, the alpha particle-irradiated cell dies. If it doesn't, it could mutate and become cancerous."

Karagueuzian said the findings are very timely in light of the June 2009 passage of the Family Smoking Prevention and Tobacco Control Act, which grants the U.S. Food and Drug Administration broad authority to regulate and remove harmful substances - with the exception of nicotine - from tobacco products. The UCLA research, he said, makes a strong case that the FDA ought to consider making the removal of alpha particles from tobacco products a top priority.

"Such a move could have a considerable public health impact, due to the public's graphic perception of radiation hazards," he said.

To uncover the information, Karagueuzian and his team combed through the internal tobacco industry documents made available online as part of the landmark 1998 Tobacco Master Settlement Agreement. Documents from Philip Morris, R.J. Reynolds, Lorillard, Brown I Williamson, the American Tobacco Company, the Tobacco Institutes and the Council for Tobacco Research, as well as the Bliley documents, were examined, Karagueuzian said.

The team searched for key terms such as "polonium-210," "atmospheric fallout," "bronchial epithelium," "hot particle" and "lung cancer," among others.

Karagueuzian said the earliest causal link between alpha particles and cancer was made in around 1920, when alpha particle-emitting radium paint was used to paint luminescent numbers on watch dials. The painting was done by hand, and the workers commonly used their lips to produce a point on the tip of the paint brush. Many workers accumulated significant burdens of alpha particles through ingestion and absorption of radium-226 into the bones and subsequently developed jaw and mouth cancers. The practice was eventually discontinued.

Another example involves liver cancer in patients exposed to chronic low-dose internal alpha particles emitted from the poorly soluble deposits of thorium dioxide after receiving the contrast agent Thorotrast. It has been suggested that the liver cancers resulted from point mutations of the tumor suppressor gene p53 by the accumulated alpha particles present in the contrast media. The use of Thorotrast as contrast agent was stopped in the 1950s.

In addition to Karagueuzian, authors of the study include the late Amos Norman, professor emeritus in the departments of radiation oncology and radiological sciences at UCLA; James Sayre, of the departments of biostatistics and radiological sciences at UCLA; and Celia White, who served from 1999 to 2002 as director of content and services at the Legacy Tobacco Documents Library, which contains more than 13 million documents created by major tobacco companies related to their advertising, manufacturing, marketing, sales and scientific research activities.

The study was funded by the University of California Tobacco-Related Disease Research Program, established by the passage of California's SB1613 in 1989 to fund a comprehensive University of California grant program to support research into the prevention, causes and treatment of tobacco-related diseases.

The authors report no conflict of interest.

Overcoming Stress With A Debt Consolidation

With the economic tribulations facing consumers there are dealing with difficult financial choices due to increased debt levels. The one positive in this time of uncertainty is using a debt consolidation however there are many things to consider before a person signs the agreement.

A person must decide on their own that they will take control of their situation and not let the situation control their future, it is a serious undertaking however it will show great results for a committed individual.

What makes this service so attractive to most consumers is that everyone wants to maintain their financial obligations however they get caught up in the debt spiral that is very difficult to break free from. This spiral starts when a client is not able to pay their bill by the due date, they either borrow money or miss the due date and get a late payment fee, in either case they are getting further into debt.

Experts advise clients to speak with friends and family to get recommendations of someone to work with regarding their debt challenges. Some may think why hire a professional when they can do it on their own. This may have a limiting effect on their chances of getting the best deal possible.

To make the case for working with a professional even stronger the initial consultation is free, A large number of people face great amounts of anxiety when it comes to finances so even the ability to speak about them with another person helps alleviate the stress and put things into true perspective.

Financial companies are very much aware of the challenges their clients are facing and are open to discussions about revising agreements, this will allow their consumers a chance to keep their commitments. Aligning with a qualified professional will help in putting together an agreement that works for both parties.

What makes this solution so appealing is most people want to honor their financial obligations however they are caught up in a debt spiral. The way a spiral works is that when a bill comes due a person does not have the cash so they are faced with a tough decision, do they borrow money to pay the debt or do they miss the due date and incur a late penalty fee, either solution ends up with the person going further into debt.

With the tightening of the economy, it seems that people are going to need more effective tools to get back to financial stability. A debt consolidation is a plan that offers the most logical course of action to overcome the uncertainty we are all facing.

You can find complete details about the many benefits of participating in a debt consolidation program and tips on how to apply for debt consolidation loans, now.

Better lithium-ion batteries are on the way

Friday, September 23, 2011

Lithium-ion batteries are everywhere, in smart phones, laptops, an array of other consumer electronics, and the newest electric cars. Good as they are, they could be much better, especially when it comes to lowering the cost and extending the range of electric cars. To do that, batteries need to store a lot more energy.

The anode is a critical component for storing energy in lithium-ion batteries. A team of scientists at the U.S. Department of Energy's Lawrence Berkeley National Laboratory (Berkeley Lab) has designed a new kind of anode that can absorb eight times the lithium of current designs, and has maintained its greatly increased energy capacity after over a year of testing and many hundreds of charge-discharge cycles.

The secret is a tailored polymer that conducts electricity and binds closely to lithium-storing silicon particles, even as they expand to more than three times their volume during charging and then shrink again during discharge. The new anodes are made from low-cost materials, compatible with standard lithium-battery manufacturing technologies. The research team reports its findings in Advanced Materials, now available online.

High-capacity expansion

"High-capacity lithium-ion anode materials have always confronted the challenge of volume change ? swelling ? when electrodes absorb lithium," says Gao Liu of Berkeley Lab's Environmental Energy Technologies Division (EETD), a member of the BATT program (Batteries for Advanced Transportation Technologies) managed by the Lab and supported by DOE's Office of Vehicle Technologies.

Says Liu, "Most of today's lithium-ion batteries have anodes made of graphite, which is electrically conducting and expands only modestly when housing the ions between its graphene layers. Silicon can store 10 times more ? it has by far the highest capacity among lithium-ion storage materials ? but it swells to more than three times its volume when fully charged."

This kind of swelling quickly breaks the electrical contacts in the anode, so researchers have concentrated on finding other ways to use silicon while maintaining anode conductivity. Many approaches have been proposed; some are prohibitively costly.

One less-expensive approach has been to mix silicon particles in a flexible polymer binder, with carbon black added to the mix to conduct electricity. Unfortunately, the repeated swelling and shrinking of the silicon particles as they acquire and release lithium ions eventually push away the added carbon particles. What's needed is a flexible binder that can conduct electricity by itself, without the added carbon.

"Conducting polymers aren't a new idea," says Liu, "but previous efforts haven't worked well, because they haven't taken into account the severe reducing environment on the anode side of a lithium-ion battery, which renders most conducting polymers insulators."

One such experimental polymer, called PAN (polyaniline), has positive charges; it starts out as a conductor but quickly loses conductivity. An ideal conducting polymer should readily acquire electrons, rendering it conducting in the anode's reducing environment.

The signature of a promising polymer would be one with a low value of the state called the "lowest unoccupied molecular orbital," where electrons can easily reside and move freely. Ideally, electrons would be acquired from the lithium atoms during the initial charging process. Liu and his postdoctoral fellow Shidi Xun in EETD designed a series of such polyfluorene-based conducting polymers ? PFs for short.

When Liu discussed the excellent performance of the PFs with Wanli Yang of Berkeley Lab's Advanced Light Source (ALS), a scientific collaboration emerged to understand the new materials. Yang suggested conducting soft x-ray absorption spectroscopy on Liu and Xun's candidate polymers using ALS beamline 8.0.1 to determine their key electronic properties.

Says Yang, "Gao wanted to know where the ions and electrons are and where they move. Soft x-ray spectroscopy has the power to deliver exactly this kind of crucial information."

Compared with the electronic structure of PAN, the absorption spectra Yang obtained for the PFs stood out immediately. The differences were greatest in PFs incorporating a carbon-oxygen functional group (carbonyl).

"We had the experimental evidence," says Yang, "but to understand what we were seeing, and its relevance to the conductivity of the polymer, we needed a theoretical explanation, starting from first principles." He asked Lin-Wang Wang of Berkeley Lab's Materials Sciences Division (MSD) to join the research collaboration.

Wang and his postdoctoral fellow, Nenad Vukmirovic, conducted ab initio calculations of the promising polymers at the Lab's National Energy Research Scientific Computing Center (NERSC). Wang says, "The calculation tells you what's really going on ? including precisely how the lithium ions attach to the polymer, and why the added carbonyl functional group improves the process. It was quite impressive that the calculations matched the experiments so beautifully."

The simulation did indeed reveal "what's really going on" with the type of PF that includes the carbonyl functional group, and showed why the system works so well. The lithium ions interact with the polymer first, and afterward bind to the silicon particles. When a lithium atom binds to the polymer through the carbonyl group, it gives its electron to the polymer ? a doping process that significantly improves the polymer's electrical conductivity, facilitating electron and ion transport to the silicon particles.

Cycling for success

Having gone through one cycle of material synthesis at EETD, experimental analysis at the ALS, and theoretical simulation at MSD, the positive results triggered a new cycle of improvements. Almost as important as its electrical properties are the polymer's physical properties, to which Liu now added another functional group, producing a polymer that can adhere tightly to the silicon particles as they acquire or lose lithium ions and undergo repeated changes in volume.

Scanning electron microscopy and transmission electron microscopy at the National Center for Electron Microscopy (NCEM), showing the anodes after 32 charge-discharge cycles, confirmed that the modified polymer adhered strongly throughout the battery operation even as the silicon particles repeatedly expanded and contracted. Tests at the ALS and simulations confirmed that the added mechanical properties did not affect the polymer's superior electrical properties.

"Without the input from our partners at the ALS and in MSD, what can be modified and what should not be modified in the next generation of polymers would not have been obvious," says Vince Battaglia, Program Manager of EETD's Advanced Energy Technologies Department.

"This achievement provides a rare scientific showcase, combining advanced tools of synthesis, characterization, and simulation in a novel approach to materials development," says Zahid Hussain, the ALS Division Deputy for Scientific Support and Scientific Support Group Leader. "The cyclic approach can lead to the discovery of new practical materials with a fundamental understanding of their properties."

The icing on the anode cake is that the new PF-based anode is not only superior but economical. "Using commercial silicon particles and without any conductive additive, our composite anode exhibits the best performance so far," says Gao Liu. "The whole manufacturing process is low cost and compatible with established manufacturing technologies. The commercial value of the polymer has already been recognized by major companies, and its possible applications extend beyond silicon anodes."

Anodes are a key component of lithium-ion battery technology, but far from the only challenge. Already the research collaboration is pushing to the next step, studying other battery components including cathodes.

?

Leukemia can be classified as either lymphoid or myeloid, denoting the type of white blood cells affected. It is also categorized as either acute or chronic reflecting the speed of progression.?

?

Acute Leukemia :

Acute Lymphoblastic (lymphoid) Leukemia (ALL) accounts for more than 80% of cases of and one of the few forms of cancer that is more common in children than adults?

?

Chronic Leukemia

Chronic leukemia which progress slowly are very rare in childhood. Chronic Myeloid Leukemia (CML) accounts for less than 3% of childhood leukemia?

?

Radiation exposure : ? Exposure to very high levels of radiation increases acute leukemia risk.

?

Exposure to benzene : ? Exposure to the chemical benzene at work over a long period of time increases your risk of developing acute leukemia.

?

Smoking : -Smoking cigarettes can increase your risk of developing acute myeloid leukemia.

?

Genetic reasons : ? Certain inherited conditions can increase the risk of developing acute leukemia. Children with Down?s syndrome are more likely to get acute myeloid leukemia than other children.

?

Family history : -Having a first or second-degree relative diagnosed with a blood cancer or lymphoma.

?

Past chemotherapy : -People who have had treatment with particular chemotherapy drugs in the past.

?

Blood disorders : -Bone marrow disorders called myelodysplastic syndrome, Fanconi?s anaemia & diseases where bone marrow makes too many blood cells (myeloproliferative disorders).

?

Viruses : -Virus called HTLV-1 (human T cell leukemia virus) causes a rare form of adult T cell leukemia.

?

Electromagnetic fields : -Power lines produce ?low frequency electromagnetic radiation? (EMR), as do electric wiring and electrical equipment.

?

Exposure to infection and childhood leukemia

?

Any diagnosis relies on a good medical history (the story of how the illness developed), a physical examination and special tests guided by the history and examination. Blood tests are important in the diagnosis of leukemia. A sample of blood is examined under a microscope to see what the cells look like and to determine the number of mature cells and blasts?

?

Treatment for leukemia is complex. It varies with the type of leukemia, and it is not the same for all patients. The treatment depends not only on the type of leukemia, but also on certain features of the leukemia cells, the extent of the disease, and whether the leukemia has been treated before. It also depends on the patient?s age, symptoms and general health?

NFL memo warns teams on faking injuries (AP)

NEW YORK ? To the fake handoff and fake field goals, add fake injuries. The NFL sent a memo Wednesday to all 32 teams warning of fines, suspensions and loss of draft picks if the league determines players faked injuries during a game. Yet several players admit its an accepted practice, and some coaches hinted they are not above condoning phony injuries if it provides a competitive edge.

"I've been places where it has been (taught)," said Browns linebacker Scott Fujita, a member of the players' union executive committee. "They have a name for it and I've been places where it's been pre-called. I've been places where it's one player who has been designated. Maybe I'm getting everyone in trouble, but I'm just being honest."

In the memo obtained by The Associated Press, the NFL reminded teams of league policy that calls on coaches to discourage the practice. There is no specific rule on the topic.

Nonetheless, two days after there was speculation the Giants' Deon Grant faked an injury against the Rams during Monday night's game, the NFL is warning of disciplinary action.

"It's always been in the game," Ravens All-Pro safety Ed Reed said. "It's all tactical stuff you need to use. Whatever it takes. ... If you're tired, you're tired. You get a break however you can."

Added 49ers running back Frank Gore: "Hey, I feel if it helps, do it. I'm bound to do it. Whatever it takes to win ..."

Rams coach Steve Spagnuolo said Tuesday the team notified the league office that it suspected the Giants were feigning injuries in St. Louis' 28-16 loss. Rams quarterback Sam Bradford said it was obvious the Giants were just buying time with St. Louis running a no-huddle offense.

"They couldn't get subbed, they couldn't line up," Bradford said. "Someone said, 'Someone go down, someone go down,' so someone just went down and grabbed a cramp."

Grant was adamant about not having faked anything.

"I could see if I was walking and fell," he said Wednesday, speaking passionately and barely taking a breath. "When you see after I made that tackle and bang my knee on that play, you see me bending my knee as I am walking. ... (Teammate Justin) Tuck is walking behind me and saying 'D don't run off the field. Just go down.' As I am walking, they line up, and knowing that I can't get back in my position because of the knee injury, I went down."

Had Grant attempted to get off the field, it could have left the Giants a defender short when the ball was snapped. Of course, New York also could have called a timeout, a course of action teams might need to use in the future.

Redskins coach Mike Shanahan was coy about the tactic when asked if he ever instructed a defense to do it.

"I can't say I have," Shanahan said before pausing. "But I won't say I haven't, either."

Then he smiled.

"It happens all the time, and warnings will come out," he added, "and it's happened again."

The memo from the league said:

"Going forward, be advised that should the league office determine that there is reasonable cause, all those suspected of being involved in faking injuries will be summoned promptly to this office ... to discuss the matter. Those found to be violators will be subject to appropriate disciplinary action for conduct detrimental to the game."

The league's competition committee often has discussed this issue but has been reluctant to propose a rule that could force game officials to make judgments on injuries.

"We have been fortunate that teams and players have consistently complied with the spirit of the rule over the years and this has not been an issue for the NFL," the memo said. "We are determined to take all necessary steps to ensure that it does not become an issue."

For the most part, such delay tactics have been considered gamesmanship, similar to a hockey goalie suddenly needing equipment repairs when his team is getting besieged. Or untouched soccer players writhing on the ground in pain to get a stoppage ? and to slow momentum built by the other side.

"As an offensive player, you always think guys are faking in that situation," Eagles guard Kyle DeVan said. "But you don't know for sure. You don't know when guys are going to cramp up, so you have to be careful. The most important thing is players' health. You would hope guys don't do it, but it's going to happen."

It might be planned, too.

While calling it "real bush league" ? no pun intended ? Dolphins running back Reggie Bush said a coach "just designates a guy who fakes an injury. It's usually not a captain of the team. It's a guy who's expendable."

The NFL's disciplinarians will be watching for that.

Kindle E-Books Now Available in Public Libraries (NewsFactor)

Kindle readers can now borrow e-books from more than 11,000 libraries in the United States. On Wednesday, Amazon announced that owners of the Kindle device, and users of the Kindle app on other devices, will be able to get e-books at local libraries.

Amazon Kindle Director Jay Marine said in a statement that Kindle users also will be able to do something on Kindle books that libraries everywhere discourage -- writing in the margins. This joy of note-takers, and bane of libraries, will be possible by extending Amazon's Whispersync technology to the Kindle library e-books.

Marine said that user "notes, highlights and bookmarks are always backed up and available the next time you check out the book or if you decide to buy the book."

'Send to Kindle'

To take advantage of this new offering, readers can use a library's website or in-house search tools to find a book to borrow. When the book is chosen, a reader can select "Send to Kindle" and the page will redirect to Amazon.com, where the user can log in to their account. The book will then be delivered by Wi-Fi or can be transferred via USB.

In addition to Amazon's own Kindle device, the Kindle app is available for Android devices, iPad, iPod Touch, iPhone, PC, Mac, BlackBerry, or Windows Phone. A user can also read a Kindle book with a regular web browser, via the Kindle Cloud Reader.

In addition to the synchronization of notes, highlights, and "last page read" across devices that is offered by Whispersync technology, Kindle library goers can refer to actual page numbers that correspond to the numbers in the print editions. Integration with Facebook and Twitter offers the ability to share through social networks. Popular Highlights show what the community of Kindle readers have identified as the most interesting sections, and Public Notes allows the ability to share notes.

'Netflix for Books'?

As Amazon expands the Kindle's footprint to libraries, it is also expected to soon expand in other major ways. For example, the giant retailer is reportedly in discussions about setting up an all-you-can-eat service for e-books, similar to the Netflix subscription-based services for streaming movies or TV shows.

The Wall Street Journal reported last month that the company was talking with book publishers about the possibility of such a service, which would involve a regular fee, possibly annually, in exchange for the ability to use a collection of e-books.

The Journal reported that some publishers are not thrilled with the idea, because it could lower the value of their titles and could strain their relationships with regular booksellers. On the other hand, some industry observers have suggested that publishers might agree to release e-books in tiers with release windows, not unlike the way movies are released.

The Journal said Amazon would begin with an e-book collection containing older titles, which would be available to Amazon Prime subscribers. Publishers would get a monthly, flat fee, and the number of books a user could read each month would be limited. Books might be particularly well-suited to a rental scheme, since few people reread a book they might own.

Understanding Restaurant Health Codes | Nagios Industry Standard ...

Understanding Restaurant Health Codes

If you own a restaurant, you not only need to run the business in a profitable manner, you need to meet the restaurant code requirements of your local government. Meeting code requirements is an ongoing and critical part of running a restaurant. Code requirements are absolute requirements that must be met in order for your business to remain open. Code citations must be promptly met and corrected.

Restaurant code requirements are put in place by the local and state government to protect the public and to help the restaurant owner operate a safe business for his diners. Compliance with the code will prevent illnesses brought on by improper food preparation, storage, cooking or lack of cleanliness by the kitchen staff. Inspectors are given wide latitude of when and how they may conduct an inspection. They can drop by at a time of their choosing, without notice to the restaurant.

Local authorities determine how often an inspection is required. There are specific requirements that must be passed in order to get a clean report. Again these requirements are part to the local rules and provisions. The inspectors are trained to look for certain important factors that are known to prevent health problems. Food used in a restaurant must come to the restaurant from approved sources. It must be stored at approved temperatures and be prepared with approved standards. Each local health inspection department can give the owner a set of rules that must be met. Cooking of food must be done at certain temperatures and then stored or kept in approved ways. Kitchen cleanliness is always an important consideration and must be done with approved methods. Washing of kitchen utensils, rags, and staff hands must be done in an approved manner by the staff of the restaurant. Cleanliness of the kitchen itself is part of the inspection and storage of cleaning chemicals must be done in an approved way. Prevention of accidental food alteration is part of the inspection.

Cooking temperatures

Local governments can set rules about the cooking temperatures for meat, poultry, pork, eggs and fish. These are in place to keep undercooked food from being served and causing a patron to have a food induced illness. Food cooked at approved temperatures will be safe to eat and should not cause the patron any problem.

Undercooked meats, eggs or fish can allow organisms that are injurious to humans live through the cooking process and make a person eating the food very ill. Cooking at approved temperatures kills the organisms and prevents the food caused illness.

]]>

Refrigeration standards

Just like cooking temperatures, refrigeration standards are set to keep food at safe temperatures. This includes storage of cooked food, uncooked food and foods that should be kept in a frozen state until ready to prepare. Poor refrigeration can be very dangerous as the food is not safely stored under these conditions. Most locals require a way to constantly monitor the temperatures of the refrigerator and freezer units. Many restaurants use a separate thermometer to meet this requirement. Since these appliances are looked at many times during daily operation, the extra temperature monitors can be seen routinely.

Salads with eggs and meats are very sensitive to poor refrigerated storage. This can be very harmful to someone who eats this food after this poor storage. This is why these requirements are in place and enforced by the inspectors.

Cooking and storage of food is a serious area of inspection and should be maintained at the code standard at all times. This is the reason for surprise inspections by local health inspectors.

Hot-Holding temperatures for cooked food

After food is cooked it must be held for service in a safe manner. Hot-Holding temperatures are mandated by local health authorities and are part of restaurant inspections. This accounts for special equipment in buffet restaurants. Their hot food trays must be kept at correct temperatures for the time they are put out for public consumption. This is another safety issue for prepared food sold to the public. This food has been cooked and must be kept at reasonable temperatures until the customer takes it.

Restaurant cleanliness

Most restaurants do a very good job of keeping the area that the public sees in very good order. The kitchen is the area that inspectors are most concerned about. Cleanliness here is imperative to the preparation of safe food. Evidence of rodents or roaches is a serious problem for restaurants and must be seriously kept to a minimum of zero tolerance. Food is always out or being prepared. This constant attraction is like a magnet to various rodents and bugs. An ongoing battle must be kept up to keep these invaders at bay. The health inspector will come down very hard on a restaurant that is lax in this area. The inspectors or the customers of the restaurant cannot tolerate situations that are not under control. Since the customers are not privy to the kitchen, it is the job of the inspector to keep this part of the restaurant up to code. The health inspectors are the eyes and ears of the customers. When they pass a restaurant on its inspection the diner can expect to be served safe food.

Cleanliness also includes the clean up of dishes and utensils, prep areas are kept in a spotless condition and rags and other cleaning tools are properly maintained and used. This care for not only the food, but also the operation of the kitchen is necessary to insure the safe delivery of food to the restaurant?s clientele. One of the ways to keep this aspect of restaurant operation is to require that codes are met and kept.

Conclusions

The restaurant business is a unique business when compared with other types of businesses. The business is heavily regulated, employee heavy, fad affected and at risk monthly or so for inspections. The good restaurateur will meet each of these challenges with skill and the desire to go the extra mile since their customers can be seriously affected by poor operations. Keeping the code requirements in place as part of their operation is not only necessary, but smart business. No restaurant wants the PR problem of a public notice of a food problem. Operating within the code will keep the owners from having this problem.

Friendly and cooperative attitude will help keep the inspectors on your side. There is not a need for an adversary type of relationship. The inspector has a job to do and the owner has to comply with the rules of the local government.

Fighting city hall is usually not a good idea, as their rules must be followed in order to sell food to the public. In the long run a clean operation will keep the restaurant out of trouble and inspire public confidence in the food served. Bad publicity about tainted food can ruin a restaurant over night and in some cases make it impossible to recover. Make sure your operation stays well within the rules and do not try to beat the system. Owners should take pride in the fact that they serve quality food that has been safely prepared and cared for before it was served. Customers will keep coming back to a restaurant that operates in this manner.
